DIY Dragon Fruit Enzyme & Apple Fruit Enzyme
July 1st, 2009 | by jys |I’ve read a lot about fruit enzyme and had always wanted to try to make it myself. However, it has been delayed and delayed cos I can’t seems to find a suitable, inexpensive glass bottle. Some told me to go find at hypermarket, some said jusco but it’s either I can’t find it, the size not suitable or the price is way too expensive.
Last weekend when I went back to my hometown, I told my aunt about this fruit enzyme. She had been making a lot of garbage enzyme (垃圾酵素) but she never heard about fruit enzyme. She was so excited after I told her and immediately she brought me to a shop where I can find all sorts of glass bottles.
Actually I wanted to get a 2 litre glass bottles but that shop only sells big glass bottles. So we ended up getting ourselves two 5 litre glass bottles. hehe… I read a lot of different versions on how to make fruit enzyme, some do it with one fruit, some mix fruits with lemon, some said with skin, some said without skin and etc. Since I love lemon so much, I decided to try the fruits with lemon version, without skin.
Formula:
Fruits (can be any fruit, dragon fruit, apple, orange, grapes, pineapple, mango..)
Lemon
brown/black sugar/Honey
Instructions:
1. Wash the fruits and leave it dry. Make sure everything is dry.
2. Remove the skin, cut the fruit into slices.
3. First layer add lemon, followed by sugar, then the fruit, then lemon again, and sugar and fruit.
4. Fill the bottle till it’s 70% full.
5. The last layer must be covered with lemon.
6. Close the bottle and placed it at a cool area for 3 weeks.
7. Remember to open up on the third day to release gas.
8. You will see the bottle filled with water on the 2nd or 3rd day (depends what fruit you used), make sure all the fruits soaked into the water.
black sugar
My aunt loves dragon fruit so I made her a jar of dragon fruit enzyme. According to some article, dragon enzyme can prevent aging!!
peel the skin, cut dragon into slices
Dragon Fruit Enzyme (龙珠果酵素)
As for me, I choose to make apple enzyme. Why? Can get rid of fats and keep fit wor. hehe..
Apple Fruit Enzyme (萍果酵素)
we ran out of black sugar, so the last layer we used brown sugar. :p should be ok gua…
last layer covered with lemon slices
I have no idea how the end result will be, how it taste and whatsoever. Pray hard, hope both enzymes also can success lar…

Hi! I have make a bottle of dragon fruits enzyme few days ago. but i’m not sure it’s safe to be consume or not when it’s ready later.
I have read a lot of blog about fruit enzyme. they always mentioned it’s not safe to consume if the enzyme got mold or white fungus things in the bottle. i’m using dragon fruits and the fruits itself got a lot of black seed. it’s hard to see if there is any mold or not.
any other method to make sure the enzyme is safe to consume?
Jys:
actually as long the mold is not black color, then it’s safe to consume. Make sure all the fruits are soaked in the water. Then it won’t grow mold.
Hope this helps.

Jys:
no no, you don’t need to put water. in fact, you need to make sure all your fruits, the knife you using to cut the fruits also without water.

Hi, thanks for the guide, I’m making apple and carrot enzyme for a week now, but found 2 worms inside so far and removed them. However, other than the worms, it seems fermenting very well without any black mould at all, is it ok with the worms? Probably they have been with the fruit when I prepare the fruits and I didn’t realise it.
Jys:
hmm, fruit enzyme with worms ar? this one i’m not sure.. but i did heard ppl mentioned worms in garbage enzyme, which is totally fine.
i guess as long a without black mold should be fine… if got black mold means failed d..

Jys:
fruit enzyme ar? it’s not difficult, but need a bit of time, cos you need to wash, then peel, then sliced it, make sure all ur utensils are not wet. As for brown sugar, yes, you can find it at supermarkets easily..

The mold on top of my fruit enzyme looks gray. Is it white mold or black mold — maybe it’s gray mold. Is it safe to consume? I only plan to pour out the enzyme liquid. But, I might get a little bit of the mold in the process.
Jys:
hmm, maybe you can scoop out the mold using a dry spoon before pouring it out…
